Did you know that the nutrients found in today's vegetables and fruits have significantly decreased compared to 50 years ago?
Even if you eat the same amount of vegetables as you did 50 years ago, you likely won't be getting the same nutrients.

This is thought to be due to the modernization of agriculture (such as large-scale farming), the resulting depletion of soil nutrients, and plant breeding.

 

A paper published in the December 2004 issue of the Journal of the American College of Nutrition reported that researchers at the University of Texas examined changes in 13 nutrients across 43 crops, including asparagus, green beans, strawberries, and watermelon, between 1950 and 1999.

The results are shown in the very first table. While the reduction in nutrients varied depending on the nutrient and crop type, decreases in protein, vitamins, and minerals were observed.

 

A decrease in nutrients directly impacts our health.
In this era of abundance, it's easy to assume no one suffers from malnutrition, yet modern people are more deficient in nutrients than you might think.

To effectively consume nutrients, eating a wider variety of foods—especially choosing organically grown vegetables and fruits—can provide higher nutritional value.

Consuming locally grown seasonal foods is also a good approach. Eating vegetables and fruits while they're fresh, and the fact that seasonal vegetables contain more nutrients than out-of-season ones, make local production for local consumption highly recommended.

The more ingredients are processed, the more nutrients are lost. For example, it is known that the amount of nutrients decreases as processing progresses when comparing eating an orange whole, juicing an orange, and then further processing it into concentrated juice. Ideally, ingredients should be cooked and eaten as little processed as possible.

 

It's a sad reality that compared to 50 years ago, the nutrient content of modern vegetables and fruits has decreased. However, by taking measures to address this issue, we can more effectively protect our own health.
